Zucchini Pie

Zucchini Pie

1 cup grated zucchini

2 eggs

1 cup milk or heavy cream

1 cup grated Parmesan cheese

1 cup herbed croutons, home made or store bought

1/8 tsp. red pepper flakes

1/8 tsp. fresh ground nutmeg

Preheat oven to 375 degrees. Whisk together milk and eggs in a bowl. Add the rest of the ingredients and stir. Pour into a oiled pie plate. Bake for 35-45 minutes or until golden brown. Serve hot or at room temperature with salad.
