Wheat thins used to be my favorite cracker growing up. But similar to most store bought crackers they are overly processed, nutrient lacking, calorie loaded, not even sure I can call them food, items. I have been looking for the perfect cracker recipe for a little while.
My Criteria:
- simple
- economical
- time efficient
- good nutrition
- minimally processed
- no sugar
- no starch flour (wheat, rice, tapioca)
- good fat and protein source
And I found it, YAY!

Better than Wheat Thins Cracker
1 cup almond meal
1 egg white
Herbs (onion powder, a bit of cayenne, Himalayan salt or Maine sea salt)
Mix together, place on parchment paper, cover with wax paper and roll out thin. Score with a pizza cutter. Sprinkle with salt. Bake at 325 for 14 minutes.
Tune in next week for the Green Goddess Herbed Cream Cheese to serve with the cracker.
