I have tried several Chia pudding recipes and as much as I wanted to love them, I just didn’t. I stumbled across this recipe on the Nutiva Chia seed package and gave it a try. It is absolutely delicious!
And as you know, I love recipes that are simple, delicious and nutritious, this one meets the criteria hands down.
All of the seeds and nuts are packed with healthy omega-3 fatty acids, protein and magnesium. This recipe is low in sugar and salt as well, all of which contribute to heart health.
Chia Pudding from Nutiva.com
(Makes 4 servings)
1 cup cashews
2 cups water
1/2 cup Nutiva Organic Hempseed
1/4 cup Nutiva Organic Coconut Sugar or Maple Syrup
1/4 tsp sea salt
2 tsp vanilla extract
1/2 cup Nutiva Organic Extra-Virgin Coconut Oil
2-1/2 tbsp Nutiva Organic Chia Seeds
Soak the cashews in water for 4-6 hours, then rinse & set aside. Melt coconut oil to a clear liquid state in a pan or a dbl boiler on the lowest temperature possible. Place the soaked cashews, water, hempseed, coconut sugar, salt & vanilla extract in a high-speed blender. Blend on high until it reaches a creamy consistency. Turn the blender on low & while it is running, slowly put in the melted coconut oil. Place the lid back on & run the blender on high for a few seconds. Turn the blender on low & slowly add in the chia seeds. Place mixture in a sealed container (a quart size Mason jar works great) & refrigerate overnight. Top w/cacao nibs, hempseed &/or fresh berries.
