This recipe uses up the leftovers from your holiday feast. Stretch your holiday dollar and time with creative use of your left over meal.
Today, I posted a recipe for Scotch Broth, a good use of leftovers as well. Now you take the Scotch Broth and turn it into Shepherds Pie. Use leftover mashed potatoes and peas to round out the dish. I made my mashed potatoes with half cauliflower and grated carrot for extra nutrition (try it, it tastes great)
Reduce the broth by simmering over low heat for 3o minutes. Place in pie dish or 8×8 baking pan. Add the peas. Cover with a layer of the mashed potatoes. Bake in a 350 degree oven for 45 minutes or until the broth bubbles and the potatoes are browned.
