In honor of PI day, I am making PIE from some of the peaches that I froze this past summer.
Yogurt Peach Pie
1 cup Maple Greek Yogurt, Milk House brand if you can get it
2 Free-range eggs, lightly beaten
1/4 cup maple syrup
1 tsp. cinnamon
1 tsp. vanilla
3-4 cups peaches, thawed, juiced reserved
Single pie 9″ pie crust or go crustless; I use a lard/butter crust that is flaky and delicious.
Prepare crust and put in pie pan.
Mix all ingredients together except peaches, save these to fold in at the end. Pour into prepared crust, bake in 375 degree oven for 35-45 minutes until the middle is set up.
